Jahbhang’s famous vegan refried beans!
OK Y’all, here it is. This is one of my favorite recipes.
It is cheap, easy, healthy, and super good.
Part I
1) After rinsing, soak 2 cups of pinto beans for at least 5 hours
2) After rising beans again, put in pot and boil on high. Boil beans until beans are soft. NOTE- The cooking time will vary depending on how long the beans were soaked.
3) When beans are finished pour into a mixing bowl.The important thing here is having the right amount of water left in the pot so the beans will mix into a proper consistency. Mix beans with electric mixer, or mash with a potato masher.
Part II
1) While the beans are cooking you must cook up the onions
2) Take one good sized red onion and dice it up.
3) Cook on med, to med low, in a sauce pan with olive oil until completely soft. NOTE- The trick here is to salt (sea salt ) the heck out of the onions. This will make them cook quicker as well as giving a unique taste to the beans.
4) After you have mixed, or mashed the beans, stir in the salty onions. Then you must add a little more salt until it suits your flavor.
That's it really! NOTE- You will probably have too add water as the beans are boiling. I'll say again, make sure you have enough water left in the pot to mix the beans properly when they are finished. If you have too much water left in the pot, the beans might mix up too runny. You will find what works best for you.
Beans save for no more than 2 days.. Make sure you let all leftovers cool down before you put them in fridge. Peace and Love! jb
